Shirakawa-kun (his hand and gelato kneading skills, more precisely) becoming my muse for this video blog post in order to demonstrate the mouth watering kneading action of the gelato flavor of Japanese chestnuts (Mont Blanc aka モンブラン)!

A good gelateria is always known to make their gelato on-site (knead right then and there instead of selling it in pre-packed cups), using fresh, natural and seasonal products. A special gelato spatula helps ‘work’ the gelato before pressing it into the cone or the cup. That is because artisan gelato is generally served at a temperature of -15 degrees or +5 Fahrenheit (whereas the serving temperature of conventional ice cream is -20 degrees or -4 F).
