Brand new flavor : ‘White Miso’, Kyoto’s winter delicacy tailored into Italian Vegan Gelato

Development of white miso gelato by Kyoto’s one and only natural food store which doesn’t use any dairy or animal products at all

Prema Inc, a Kyoto based company with years of experience in organic food distribution, is headed by Mr. Nobuo Nakagawa, who himself went to Italy, studied about gelato production and opened ‘Premarche Gelateria’ in April 2017. He’s been creating gelato rich of natural food ingredients, one after the other at the store which usually offers almost about 46 flavors!

This Gelateria doesn’t use any imported refined sugar or synthetic emulsifier and continues to develop new types of gelato by using special characteristics of natural foods. Especially their vegan (pure vegetarian) gelato that does not include any dairy or animal products is highly recognized among foreigners visiting Kyoto. At the same time, their vegan gelato is also popular amongst parents and children suffering from food allergies (milk etc).

This is one flavor that I really wish to convey to the people of Kyoto. From my childhood days, it is this white miso that used to be served to me on the dining table during winter season. Anyhow, miso’s  compatibility with milk is definitely not good. Hence, in order to achieve the richness and smoothness of white miso which consists of soy milk as its base and fresh acidity of Yuzu (Japanese citrus), I used the method of trial and error repeatedly. White miso is widely known as an ingredient for relieving stress and is the perfect ingredient for our Gelateria that reflects back to my vision of preparing a medicine for the heart’’, as said by Vegan Gelato Maestro, President of Prema Inc, Mr. Nobuo Nakagawa.

Since they are a natural food store, while selecting white miso a lot of effort was put into procuring natural white miso from each brewery. Each sample was repeatedly tested and the one with the most suitable flavor and texture to that of a gelato, was selected.

Without using any synthetic emulsifier, white miso is thoroughly treated and blended with soy milk as base which is made of organic certified material using the company’s unique special technique after bringing out its smoothness. Furthermore, coral powder that lacks in non-animal products but is rich in minerals and calcium is also used. It is extracted from tens of thousands of year old fossils that exist only in Yonaguni Island in Okinawa Prefecture.

White miso gelato, an example of historical food of Kyoto being modernized using only natural ingredients, is available at the price of  500 yen for 1 flavor (tax included) from 1at December onwards at Premarche Gelateria situated south of Nijo Castle, in the longest shopping district of Kyoto, Sanjokai.

Knowledge about soybean miso: Characteristics of white miso and its charm as healthy gelato

Miso can be classified into “white miso” and “red miso”, and their properties are determined by the manufacturing method and raw materials. Basically, the main ingredients of miso are soybeans and rice malt. Red miso contains a high blend ratio of soybeans, which matures for a long time at a high temperature and becomes darker in color. The white miso that is used includes a good amount of salt and since it’s matured for a longer period of time, it is said to cleanse the blood when used in miso soup.

On the other hand, white miso is matured for a shorter period of time along with refined and uncolored rice and soybean effused off sugar and protein by boiling. Therefore, compared to red miso, white miso has less salt content, stronger sense of sweetness and smoothness, making it suitable to be used as a substitute to sugar in the world of natural food.

In order to make full use of white miso’s characteristics, it is recommended not to match it with fatty ingredients included in milk and eggs and is hence, deemed as the best ingredient for Vegan · Shojin gelato.

White miso also contains GABA (gamma-Aminobutyric acid) in abundance which is not found in red miso. GABA  is known to release excitement, irritation, stress and produce a relaxation effect. White miso calms the mind and body and is truly the best healthy ingredient as vegan gelato ingredient of Premarche Gelateria.
